The program involves the development of a new-generation biosensor for the measurement of reducing sugars in potatoes and assessment of acrylamide formation.
The reflab program aims at obtaining a new-generation dehydrogenase biosensor based on a generic model offering versatility, a valuable flexibility of use and high sensitivity for application in the food industry.
The biosensor technique, based on an innovative « redo-flexible » operation mode, will be developed for the analysis of reducing sugars (e.g. glucose and sucrose) to be used in the potatoe industry to control harvesting and storage conditions, thus reducing the risk of acrylamide formation
